How To Make Parcel-poached Salmon with Herby Mayonnaise

Ingredients
- 4 salmon fillets
- 4 sheets of parchment paper
- 1 lemon, sliced
- Salt and pepper, to taste
- Herby Mayonnaise:
- 1 cup mayonnaise
- 2 tbsp fresh dill, chopped
- 2 tbsp fresh parsley, chopped
- 1 tbsp fresh chives, chopped
- 1 tbsp lemon juice
- Salt and pepper, to taste
Instructions

Preheat your oven to 375°F (190°C).

Season each salmon fillet with salt and pepper on both sides.

Place a salmon fillet on each parchment paper sheet, top with a few lemon slices, and fold the parchment paper to create a tight seal.

Place the salmon parcels on a baking sheet and bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through.

Meanwhile, prepare the herby mayonnaise by combining the mayonnaise, dill, parsley, chives, lemon juice, salt, and pepper in a small bowl. Mix well.

Once the salmon is cooked, carefully open the parcels and serve each fillet with a dollop of the herby mayonnaise on top.
