How To Make Parcel-poached Salmon with Herby Mayonnaise

Ingredients

  • 4 salmon fillets
  • 4 sheets of parchment paper
  • 1 lemon, sliced
  • Salt and pepper, to taste
  • Herby Mayonnaise:
  • 1 cup mayonnaise
  • 2 tbsp fresh dill, chopped
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • 1 tbsp lemon juice
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 375°F (190°C).

  2. Season each salmon fillet with salt and pepper on both sides.

  3. Place a salmon fillet on each parchment paper sheet, top with a few lemon slices, and fold the parchment paper to create a tight seal.

  4. Place the salmon parcels on a baking sheet and bake in the preheated oven for 20-25 minutes, or until the salmon is cooked through.

  5. Meanwhile, prepare the herby mayonnaise by combining the mayonnaise, dill, parsley, chives, lemon juice, salt, and pepper in a small bowl. Mix well.

  6. Once the salmon is cooked, carefully open the parcels and serve each fillet with a dollop of the herby mayonnaise on top.
