Ingredients

  • 400g spaghetti
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 4 anchovy fillets, chopped
  • 1/2 tsp red pepper flakes
  • 1 tbsp capers
  • 1/4 cup black olives, pitted and chopped
  • 1 can (400g) diced tomatoes
  • 2 tbsp tomato paste
  • Salt and pepper, to taste
  • Fresh parsley, for garnish (optional)

Instructions

  1. Cook the spaghetti according to package instructions until al dente. Drain and set aside.

  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1 minute until fragrant.

  3. Add the chopped anchovies and red pepper flakes, and cook for another minute, stirring frequently.

  4. Stir in the capers, chopped black olives, diced tomatoes, and tomato paste. Season with salt and pepper.

  5. Simmer the sauce for about 10 minutes, allowing the flavors to meld together. If the sauce is too thick, add a splash of pasta water to thin it out.

  6. Add the cooked spaghetti to the skillet and toss well to coat the pasta in the sauce.

  7. Serve hot, garnished with fresh parsley if desired.
