Serves:
Ingredients
- 400g spaghetti
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 4 anchovy fillets, chopped
- 1/2 tsp red pepper flakes
- 1 tbsp capers
- 1/4 cup black olives, pitted and chopped
- 1 can (400g) diced tomatoes
- 2 tbsp tomato paste
- Salt and pepper, to taste
- Fresh parsley, for garnish (optional)
Instructions
-
Cook the spaghetti according to package instructions until al dente. Drain and set aside.
-
In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
-
Add the chopped anchovies and red pepper flakes, and cook for another minute, stirring frequently.
-
Stir in the capers, chopped black olives, diced tomatoes, and tomato paste. Season with salt and pepper.
-
Simmer the sauce for about 10 minutes, allowing the flavors to meld together. If the sauce is too thick, add a splash of pasta water to thin it out.
-
Add the cooked spaghetti to the skillet and toss well to coat the pasta in the sauce.
-
Serve hot, garnished with fresh parsley if desired.
