How To Make Cod & pea fritters

Ingredients

  • 1 lb cod fillets, cooked and flaked
  • 1 cup frozen peas, thawed
  • 1/2 cup all-purpose flour
  • 2 eggs
  • 1/4 cup milk
  • 1/4 cup grated Parmesan cheese
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Vegetable oil for frying

Instructions

  1. In a large bowl, combine the cod, peas, flour, eggs, milk, Parmesan cheese, baking powder, salt, and black pepper. Mix well until fully combined.

  2. Heat vegetable oil in a frying pan over medium heat.

  3. Drop spoonfuls of the cod and pea mixture into the hot oil and flatten slightly with the back of a spoon. Cook for 3-4 minutes on each side or until golden brown and crispy.

  4. Remove the fritters from the pan and place on a paper towel-lined plate to drain excess oil.

  5. Serve the cod and pea fritters hot with tartar sauce or a side salad.
