Ingredients

  • 1 lb salt cod, soaked overnight and drained
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 cup milk
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh cilantro, chopped
  • 1/2 tsp paprika
  • Vegetable oil, for frying
  • Salt, to taste

Instructions

  1. In a large pot, bring water to a boil and add the soaked salt cod. Cook for 10 minutes, then drain and let it cool. Remove the skin and bones, and flake the cod into small pieces.

  2. In a mixing bowl, whisk together flour, baking powder, milk, minced garlic, parsley, cilantro, and paprika until a thick batter forms. Stir in the flaked cod and season with salt to taste.

  3. Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).

  4. Drop spoonfuls of the cod batter into the hot oil and fry until golden brown and crisp, about 3-4 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.

  5. Serve the salt cod fritters hot with saffron allioli dip on the side.
