How To Make Salt Cod Fritters with Saffron Allioli

Ingredients
- 1 lb salt cod, soaked overnight and drained
- 2 cups all-purpose flour
- 1 tsp baking powder
- 1/2 cup milk
- 2 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 1/2 tsp paprika
- Vegetable oil, for frying
- Salt, to taste
Instructions

In a large pot, bring water to a boil and add the soaked salt cod. Cook for 10 minutes, then drain and let it cool. Remove the skin and bones, and flake the cod into small pieces.

In a mixing bowl, whisk together flour, baking powder, milk, minced garlic, parsley, cilantro, and paprika until a thick batter forms. Stir in the flaked cod and season with salt to taste.

Heat vegetable oil in a deep skillet or fryer to 350°F (175°C).

Drop spoonfuls of the cod batter into the hot oil and fry until golden brown and crisp, about 3-4 minutes per side. Transfer to a paper towel-lined plate to drain excess oil.

Serve the salt cod fritters hot with saffron allioli dip on the side.
