
How To Make Old-Fashioned Italian Zucchini Fritters

Ingredients
- 2 cups shredded zucchini
- 1 tsp salt
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/4 tsp black pepper
- 2 eggs, beaten
- Vegetable oil, for frying
Instructions

Place the shredded zucchini in a colander and sprinkle with salt. Let it sit for 10 minutes to draw out the excess moisture. Squeeze out any remaining liquid.

In a large bowl, combine the shredded zucchini, flour, Parmesan cheese, minced garlic, Italian seasoning, black pepper, and beaten eggs. Mix well until all the ingredients are evenly combined.

Heat a frying pan over medium heat and add enough vegetable oil to cover the bottom of the pan.

Drop spoonfuls of the zucchini mixture into the hot oil and flatten slightly with the back of the spoon. Cook for 2-3 minutes per side, until golden brown and crispy.

Remove the fritters from the pan and drain on a paper towel-lined plate.
