Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/4 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, cold and cut into small pieces
  • 2-3 tbsp ice water
  • 6 fresh apricots, pitted and sliced
  • 1/4 cup granulated sugar
  • 1 tbsp cornstarch
  • 1/4 tsp almond extract

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. In a food processor, combine the flour, brown sugar, cinnamon, and salt. Add the butter and pulse until the mixture resembles coarse crumbs.

  3. Gradually add the ice water, one tablespoon at a time, pulsing just until the dough comes together.

  4. Turn the dough out onto a lightly floured surface and shape it into a disk. Wrap in plastic wrap and refrigerate for 30 minutes.

  5. In a bowl, toss the apricot slices with granulated sugar, cornstarch, and almond extract until well coated.

  6. Roll out the chilled dough on a floured surface to fit a 9-inch tart pan. Press the dough into the pan, trimming any excess.

  7. Arrange the coated apricot slices evenly over the tart shell.

  8. Bake for 35-40 minutes, or until the crust is golden and the apricots are tender.

  9. Allow the tart to cool before serving.
