Ingredients

  • 4 salmon fillets
  • 1 cup of unsweetened shredded coconut
  • 1/2 cup of breadcrumbs
  • 1/4 cup of chopped fresh cilantro
  • 1 tsp of ground cumin
  • 1 tsp of ground paprika
  • 1/2 tsp of ground turmeric
  • Salt and pepper, to taste
  • 2 tbsp of olive oil
  • Lemon wedges, for serving

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, combine the shredded coconut, breadcrumbs, cilantro, cumin, paprika, turmeric, salt, and pepper.

  3. Brush the salmon fillets with olive oil, then coat them with the spiced coconut crumb mixture, pressing it gently to adhere.

  4. Place the coated salmon fillets on a baking sheet lined with parchment paper.

  5. Roast in the preheated oven for 15-20 minutes, or until the salmon is cooked through and the coconut crumbs are golden and crispy.

  6. Serve the roast salmon with spiced coconut crumbs with lemon wedges.
