Ingredients

  • 4 barramundi fillets
  • 1/2 cup fresh basil leaves, chopped
  • 2 lemons, juiced and zest
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • Salt and black pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Season the barramundi fillets with salt and black pepper on both sides.

  3. Heat olive oil in a large skillet over medium-high heat.

  4. Sear the fillets for 2-3 minutes on each side until they develop a golden crust.

  5. Transfer the fillets to a baking dish and bake in the preheated oven for 8-10 minutes or until cooked through.

  6. In the same skillet, add garlic and cook for 1-2 minutes until fragrant.

  7. Add lemon juice, lemon zest, and chopped basil to the skillet. Cook for another 2-3 minutes, stirring occasionally.

  8. Remove the barramundi fillets from the oven and drizzle the lemon basil sauce over them.

  9. Serve hot with your favorite side dishes.
