Ingredients
- 2 aubergines, sliced into rounds
- 200g prawns, peeled and deveined
- 100g chorizo, sliced
- 2 tablespoons preserved lemon, finely chopped
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

Preheat a griddle pan or barbecue.

Brush the aubergine slices with olive oil and season with salt and pepper.

Grill the aubergine slices on each side until tender and lightly charred. Set aside.

In the same pan, cook the prawns and chorizo until the prawns are pink and cooked through.

In a small bowl, whisk together the preserved lemon, olive oil, salt, and pepper to make the dressing.

Arrange the grilled aubergine, prawns, and chorizo on a serving platter.

Drizzle the preserved lemon dressing over the salad.
