Ingredients

  • 4 large muffaletta rolls
  • 1 cup of corn kernels
  • 1 cup of shredded mozzarella cheese
  • 1/4 cup of sliced black olives
  • 1/4 cup of diced red bell pepper
  • 1/4 cup of diced green bell pepper
  • 1/4 cup of diced red onion
  • 1/4 cup of sliced pepperoni
  • 1/4 cup of chopped fresh parsley
  • 1/4 cup of Italian dressing

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. Slice the muffaletta rolls in half horizontally and hollow out some of the bread from the inside.

  3. In a mixing bowl, combine the corn, mozzarella cheese, black olives, red bell pepper, green bell pepper, red onion, pepperoni, parsley, and Italian dressing.

  4. Spoon the corn mixture into the hollowed-out rolls and press down firmly.

  5. Place the muffaletta rolls on a baking sheet and bake for 20-25 minutes, or until the cheese is melted and bubbly.

  6. Remove from the oven and let cool for a few minutes before serving.

  7. Cut each muffaletta in half and serve warm.
