  • 1 ½ cups cornmeal
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • ½ tsp salt
  • 1 cup shredded cheddar cheese
  • 1 cup corn kernels
  • 1 cup milk
  • 2 eggs
  • 2 tbsp melted butter

Instructions

  1. In a large bowl, mix together cornmeal, flour, baking powder, and salt.

  2. Stir in shredded cheese and corn kernels.

  3. In a separate bowl, whisk together milk, eggs, and melted butter.

  4. Pour the wet ingredients into the dry ingredients and stir until just combined.

  5. Heat a non-stick skillet over medium heat and lightly grease with butter or oil.

  6. Drop spoonfuls of the batter onto the skillet and cook for 3-4 minutes on each side or until golden brown.
