  • 4 slices of whole wheat bread
  • 2 ripe avocados
  • Juice of 1 lemon
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional)
  • 1/4 cup chopped fresh cilantro
  • 1 small cucumber, sliced
  • 1 small tomato, sliced
  • 1/4 cup sliced red onion

Instructions

  1. Toast the slices of bread in a toaster or on a grill until golden brown.

  2. In a bowl, mash the ripe avocados with lemon juice, salt, black pepper, and red pepper flakes.

  3. Spread the avocado mixture evenly on each slice of toasted bread.

  4. Top with cucumber slices, tomato slices, and red onion.

  5. Sprinkle with chopped fresh cilantro.

  6. Serve immediately.
