How To Make Zingy Rice Salad

Ingredients
- 2 cups cooked rice
- 1 cup diced cucumber
- 1 cup diced bell peppers (assorted colors)
- 1/2 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint
- 2 tablespoons lime juice
- 2 tablespoons olive oil
- 1 tablespoon honey
- Salt to taste
- Black pepper to taste
Instructions

In a large mixing bowl, combine the cooked rice, cucumber, bell peppers, red onion, cilantro, and mint.

In a separate small bowl, whisk together the lime juice, olive oil, honey, salt, and black pepper.
