Ingredients

  • 2 cups cooked rice
  • 1 cup diced cucumber
  • 1 cup diced bell peppers (assorted colors)
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon honey
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large mixing bowl, combine the cooked rice, cucumber, bell peppers, red onion, cilantro, and mint.

  2. In a separate small bowl, whisk together the lime juice, olive oil, honey, salt, and black pepper.

  3. Pour the dressing over the rice salad and toss gently to combine.

  4. Allow the salad to marinate in the fridge for at least 30 minutes before serving.

  5. Serve chilled and enjoy!
