How To Make Squid, Chickpea & Chorizo Salad

Ingredients
- 1 lb squid, cleaned and sliced into rings
- 1 can chickpeas, drained and rinsed
- 1/2 cup chorizo, sliced
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh parsley, chopped
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions

In a large skillet, heat olive oil over medium heat. Add chorizo and cook until crispy. Remove from skillet and set aside.

In the same skillet, add squid rings and cook for 2-3 minutes until cooked through. Remove from skillet and set aside.

In a large bowl, combine chickpeas, red onion, parsley, cooked chorizo, and cooked squid.

In a small bowl, whisk together lemon juice, minced garlic, salt, and pepper. Drizzle the dressing over the salad and toss to combine.

Serve the salad immediately and enjoy.
