Ingredients

  • 1 lb squid, cleaned and sliced into rings
  • 1 can chickpeas, drained and rinsed
  • 1/2 cup chorizo, sliced
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh parsley, chopped
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 clove garlic, minced
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add chorizo and cook until crispy. Remove from skillet and set aside.

  2. In the same skillet, add squid rings and cook for 2-3 minutes until cooked through. Remove from skillet and set aside.

  3. In a large bowl, combine chickpeas, red onion, parsley, cooked chorizo, and cooked squid.

  4. In a small bowl, whisk together lemon juice, minced garlic, salt, and pepper. Drizzle the dressing over the salad and toss to combine.

  5. Serve the salad immediately and enjoy.
