Ingredients

  • 2 cups canned chickpeas, rinsed and drained
  • 1 bell pepper, thinly sliced
  • 4 oz chorizo, sliced
  • 1 red onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, combine the chickpeas, bell pepper, chorizo, red onion, garlic, olive oil, paprika, cumin, salt, and pepper.

  3. Spread the mixture onto a baking sheet and roast for 25 minutes, or until the chickpeas are crispy and the chorizo is cooked through.

  4. Remove from the oven and let cool for a few minutes.

  5. Transfer the salad to a serving dish and garnish with fresh parsley.

  6. Serve warm and enjoy!
