How To Make Warm Chickpea, Chorizo & Pepper Salad

Ingredients
- 2 cups canned chickpeas, rinsed and drained
- 1 bell pepper, thinly sliced
- 4 oz chorizo, sliced
- 1 red onion, thinly sliced
- 2 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp paprika
- 1/2 tsp cumin
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

Preheat the oven to 400°F (200°C).

In a large bowl, combine the chickpeas, bell pepper, chorizo, red onion, garlic, olive oil, paprika, cumin, salt, and pepper.

Spread the mixture onto a baking sheet and roast for 25 minutes, or until the chickpeas are crispy and the chorizo is cooked through.

Remove from the oven and let cool for a few minutes.

Transfer the salad to a serving dish and garnish with fresh parsley.
