  • 1 tbsp olive oil
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 8 oz chorizo, sliced
  • 2 cups chicken broth
  • 1 can (15 oz) diced tomatoes
  • 2 cans (15 oz each) chickpeas, drained and rinsed
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • Salt and pepper, to taste
  • Fresh parsley, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until softened.

  2. Add chorizo to the pot and cook until it starts to brown.

  3. Pour in chicken broth, diced tomatoes, chickpeas, smoked paprika, and cumin. Season with salt and pepper.

  4. Bring the stew to a boil, then reduce heat and let it simmer for 30 minutes, uncovered.

  5. Serve the chorizo and chickpea stew hot, garnished with fresh parsley. Enjoy!
