How To Make Baked Fennel Pork with Lemony Potatoes & Onions

Ingredients
- 1.5 lbs pork tenderloin
- 2 fennel bulbs, sliced
- 1.5 lbs baby potatoes, halved
- 1 large onion, sliced
- 4 cloves of garlic, minced
- 1 lemon, zest and juice
- 2 tbsp olive oil
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper to taste
Instructions

Preheat the oven to 375°F (190°C).

Season the pork tenderloin with salt, pepper, dried thyme, and dried rosemary. Place it in a baking dish.

In a large mixing bowl, combine the sliced fennel, halved baby potatoes, sliced onion, minced garlic, lemon zest, lemon juice, olive oil, salt, and pepper. Toss to coat everything evenly.

Pour the fennel and potato mixture around the pork tenderloin in the baking dish.

Bake in the preheated oven for 45-55 minutes, or until the pork reaches an internal temperature of 145°F (63°C) and the potatoes are tender.

Remove from the oven and let the pork rest for 5 minutes before slicing.
