How To Make Warm Chorizo & Chickpea Salad

Ingredients
- 8 oz chorizo, sliced
- 1 can (15 oz) chickpeas, drained and rinsed
- 2 cups baby spinach
- 1 small red onion, thinly sliced
- 1 red bell pepper, diced
- 1/4 cup sliced black olives
- 1/4 cup crumbled feta cheese
- 2 tbsp olive oil
- 2 tbsp red wine vinegar
- 1 tsp dried oregano
- Salt and pepper, to taste
Instructions

Heat a large skillet over medium heat and add the chorizo. Cook until crispy, about 5 minutes. Remove from the skillet and set aside.

In the same skillet, add the chickpeas and cook for 3-4 minutes, until lightly browned.

In a large bowl, combine the baby spinach, red onion, red bell pepper, black olives, and feta cheese.

In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, salt, and pepper.

Add the cooked chorizo and chickpeas to the salad bowl. Pour the dressing over the salad and toss to combine.

Serve the warm chorizo & chickpea salad immediately.
