Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 2 cans (5 oz each) chunk light tuna in water, drained
  • 1/4 cup diced red onion
  • 1/4 cup diced cucumber
  • 1/4 cup diced red bell pepper
  • 1/4 cup chopped fresh cilantro
  • 1 jalapeno pepper, seeded and minced
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat and simmer for 12-15 minutes until the quinoa is cooked and the water is absorbed. Remove from heat and let it cool.

  2. In a large bowl, mix together cooked quinoa, tuna, red onion, cucumber, red bell pepper, cilantro, and jalapeno pepper.

  3. In a separate small bowl, whisk together olive oil, lime juice, cumin, chili powder, salt, and pepper.

  4. Pour the dressing over the tuna and quinoa mixture and toss gently to combine.

  5. Serve chilled and enjoy!
