How To Make Spicy Tuna Quinoa Salad

Ingredients
- 1 cup quinoa
- 2 cups water
- 2 cans (5 oz each) chunk light tuna in water, drained
- 1/4 cup diced red onion
- 1/4 cup diced cucumber
- 1/4 cup diced red bell pepper
- 1/4 cup chopped fresh cilantro
- 1 jalapeno pepper, seeded and minced
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder
- Salt and pepper to taste
Instructions

In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat and simmer for 12-15 minutes until the quinoa is cooked and the water is absorbed. Remove from heat and let it cool.

In a large bowl, mix together cooked quinoa, tuna, red onion, cucumber, red bell pepper, cilantro, and jalapeno pepper.

In a separate small bowl, whisk together olive oil, lime juice, cumin, chili powder, salt, and pepper.

Pour the dressing over the tuna and quinoa mixture and toss gently to combine.
