How To Make Warm Salad of Asparagus, Bacon, Duck Egg & Hazelnuts

Ingredients
- 1 bunch of asparagus, trimmed
- 4 slices of bacon, diced
- 4 duck eggs
- 1 cup of hazelnuts, chopped
- 1 tbsp of olive oil
- Salt and pepper to taste
- 1 tbsp of balsamic vinegar
- Mixed salad greens for serving
Instructions

Preheat the oven to 400°F (200°C).

Place the asparagus on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the oven for about 10-15 minutes until tender, shaking the pan halfway through.

In the meantime, cook the diced bacon in a skillet over medium heat until crispy. Remove from the pan and drain on a paper towel.

In the same skillet, fry the duck eggs sunny-side up until the whites are set but the yolks are still runny.

In a small bowl, mix the balsamic vinegar with a pinch of salt and pepper to make a dressing.

To assemble the salad, divide the mixed salad greens among 4 plates. Top with roasted asparagus, crispy bacon, fried duck eggs, and chopped hazelnuts.

Drizzle the balsamic dressing over the salad and serve immediately.
