Ingredients

  • 2 medium-sized beets, grated
  • 2 carrots, grated
  • 1 small red onion, thinly sliced
  • 2 cups of shredded cabbage
  • 2 tablespoons of chopped fresh cilantro
  • 2 tablespoons of chopped fresh mint
  • 4 boneless, skinless chicken breasts
  • 2 tablespoons of olive oil
  • Salt and pepper, to taste
  • Juice of 1 lemon

Instructions

  1. Preheat the grill to medium-high heat.

  2. In a large mixing bowl, combine the grated beets, carrots, red onion, cabbage, cilantro, and mint.

  3. In a separate bowl, season the chicken breasts with olive oil, salt, pepper, and lemon juice.

  4. Grill the chicken breasts for about 8-10 minutes per side or until fully cooked.

  5. Once the chicken is cooked, let it rest for a few minutes before slicing it into strips.

  6. Add the grilled chicken to the bowl of slaw and toss everything together until well combined.

  7. Serve the crunchy beetroot slaw with grilled chicken immediately.
