Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 cup all-purpose flour
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 eggs, beaten
  • 2 cups panko breadcrumbs
  • Vegetable oil for frying
  • 2 apples, cored and thinly sliced
  • 1/2 small cabbage, thinly shredded
  • 1/4 cup mayonnaise
  • 1 tbsp apple cider vinegar
  • 1 tsp honey
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a shallow dish, mix together the flour, paprika, garlic powder, salt, and black pepper.

  3. Dip each chicken breast into the beaten eggs, then dredge in the flour mixture, pressing to adhere.

  4. In a separate dish, place the panko breadcrumbs. Coat each chicken breast with breadcrumbs, pressing to coat evenly.

  5. Heat vegetable oil in a large skillet over medium-high heat. Fry the chicken breasts until golden brown and crispy, about 4 minutes per side. Transfer the chicken to a baking sheet and finish cooking in the preheated oven for 10-12 minutes, or until cooked through.

  6. In a large bowl, combine the sliced apples and shredded cabbage.

  7. In a small bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper. Pour the dressing over the apple-cabbage mixture and toss to coat.

  8. Serve the crispy chicken alongside the apple slaw.
