Ingredients

  • 1 cup of cooked rice
  • 1 cup of black beans, rinsed and drained
  • 1 cup of corn kernels
  • 1 cup of cherry tomatoes, halved
  • 1/4 cup of red onion, diced
  • 1/4 cup of fresh cilantro, chopped
  • 2 tablespoons of olive oil
  • 2 tablespoons of lime juice
  • 1 teaspoon of cumin
  • 1/2 teaspoon of chili powder
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the cooked rice, black beans, corn kernels, cherry tomatoes, red onion, and cilantro.

  2. In a separate small bowl, whisk together the olive oil, lime juice, cumin, chili powder, salt, and pepper.

  3. Pour the dressing over the rice and bean mixture and toss well to combine.

  4. Serve chilled and enjoy!
