How To Make Mexican Rice & Bean Salad

Ingredients
- 1 cup of cooked rice
- 1 cup of black beans, rinsed and drained
- 1 cup of corn kernels
- 1 cup of cherry tomatoes, halved
- 1/4 cup of red onion, diced
- 1/4 cup of fresh cilantro, chopped
- 2 tablespoons of olive oil
- 2 tablespoons of lime juice
- 1 teaspoon of cumin
- 1/2 teaspoon of chili powder
- Salt and pepper to taste
Instructions

In a large mixing bowl, combine the cooked rice, black beans, corn kernels, cherry tomatoes, red onion, and cilantro.

In a separate small bowl, whisk together the olive oil, lime juice, cumin, chili powder, salt, and pepper.

Pour the dressing over the rice and bean mixture and toss well to combine.
