  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 carrots, diced
  • 2 zucchini, diced
  • 1 yellow squash, diced
  • 1 red bell pepper, diced
  • 4 cups vegetable broth
  • 1 can diced tomatoes
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 cup cooked pasta (optional)
  • Fresh basil leaves for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onions and garlic, and sauté until onions are translucent.

  2. Add carrots, zucchini, yellow squash, and red bell pepper. Cook for 5 minutes, stirring occasionally.

  3. Pour in vegetable broth and diced tomatoes. Bring to a boil, then reduce heat to low and simmer for 10 minutes.

  4. Stir in green beans, dried basil, dried oregano, salt, and pepper. Cook for an additional 5 minutes.

  5. If using pasta, add it to the pot and cook for 2-3 minutes until heated through.

  6. Serve hot, garnished with fresh basil leaves.
