  • 8 cups of mixed greens
  • 1 cup of crumbled feta cheese
  • 4 clementines, peeled and segmented
  • 1/2 cup of sliced almonds
  • 1/4 cup of chopped fresh mint
  • 1/4 cup of extra virgin olive oil
  • 2 tablespoons of lemon juice
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the mixed greens, crumbled feta cheese, clementine segments, sliced almonds, and chopped fresh mint.

  2. In a small bowl, whisk together the extra virgin olive oil, lemon juice, salt, and pepper.

  3. Drizzle the dressing over the salad and toss gently to combine.
