How To Make Christmas Turkey with Clementine & Bay Butter

Ingredients

  • 1 turkey (approximately 10-12 pounds)
  • 2 clementines, zested and juiced
  • 1/2 cup unsalted butter, softened
  • 4 bay leaves
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 325°F (163°C). Rinse the turkey and pat it dry with paper towels.

  2. In a small bowl, mix together the clementine zest, clementine juice, softened butter, and a pinch of salt and pepper.

  3. Carefully loosen the turkey’s skin from the breast and thigh meat. Rub the clementine and bay butter mixture under the skin, being careful not to tear the skin.

  4. Generously season the outside of the turkey with salt and pepper. Place the bay leaves under the skin, along with any remaining clementine zest.

  5. Tie the turkey legs together with kitchen twine and tuck the wings underneath the body. Place the turkey on a rack inside a roasting pan.

  6. Roast the turkey in the preheated oven for approximately 2 hours and 30 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.

  7. Every 30 minutes, baste the turkey with the pan juices. If the skin starts to brown too quickly, cover it loosely with aluminum foil.

  8. Once the turkey is cooked, remove it from the oven and let it rest for at least 30 minutes before carving.

  9. Serve the Christmas turkey with clementine & bay butter alongside your favorite festive sides for a delicious holiday meal.
