Ingredients

  • 1 lb turkey breast, cooked and sliced
  • 4 clementines, peeled and segmented
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/2 cup sliced red onion
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup sliced almonds
  • for the dressing:
  • 2 tablespoons olive oil
  • 2 tablespoons fresh clementine juice
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. In a small bowl, whisk together the olive oil, clementine juice, honey, Dijon mustard, salt, and pepper to make the dressing. Set aside.

  2. In a large bowl, combine the mixed salad greens, cherry tomatoes, avocado, red onion, and cilantro. Toss with half of the dressing.

  3. Divide the salad mixture among 4 bowls. Top each bowl with sliced turkey breast and clementine segments.

  4. Drizzle the remaining dressing over the bowls and sprinkle with sliced almonds.

  5. Serve immediately and enjoy!
