Ingredients

  • 4 large courgettes (zucchinis), spiralized
  • 2 tablespoons olive oil
  • 2 cloves of garlic, minced
  • 1 red chili, thinly sliced
  • Zest and juice of 1 lemon
  • 200g ricotta cheese
  • Handful of fresh mint leaves, chopped
  • Salt, to taste

Instructions

  1. Heat the olive oil in a large pan over medium heat. Add the garlic and chili and cook for 1 minute.

  2. Add the spiralized courgettes and cook for 3-4 minutes, until tender but still slightly crisp.

  3. Remove from heat and stir in the lemon zest, lemon juice, and a pinch of salt.

  4. Divide the courgetti onto plates and top with dollops of ricotta cheese.

  5. Sprinkle with chopped mint leaves and serve immediately.
