  • 4 medium courgettes (zucchini)
  • 1/4 cup fresh mint leaves, chopped
  • 1/2 cup ricotta cheese
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions

  1. Preheat the grill or barbecue to medium-high heat.

  2. Slice the courgettes lengthwise into thin strips.

  3. In a small bowl, combine the olive oil, lemon juice, salt, and pepper.

  4. Brush both sides of the courgette slices with the olive oil mixture.

  5. Grill the courgette slices on each side for about 2-3 minutes, until they are tender and have grill marks.

  6. In a separate bowl, mix the fresh mint leaves and ricotta cheese.

  7. Spread a small amount of the ricotta mixture onto each grilled courgette slice.

  8. Roll up the courgette slices and secure with toothpicks, if needed.

  9. Serve the courgette rolls as a refreshing appetizer or side dish.
