Ingredients

  • 1 lb ground beef
  • 1/2 cup bread crumbs
  • 1/4 cup finely chopped onion
  • 1 clove garlic, minced
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup beef broth
  • 1/4 cup chopped fresh cilantro, for garnish

Instructions

  1. In a large bowl, combine ground beef, bread crumbs, onion, garlic, chili powder, cumin, paprika, salt, and black pepper. Mix well and shape into meatballs.

  2. Heat a large skillet over medium heat and cook the meatballs until browned on all sides, about 5 minutes. Remove from skillet and set aside.

  3. In the same skillet, add diced tomatoes, black beans, and beef broth. Bring to a simmer and return the meatballs to the skillet. Cook for 20 minutes, or until the meatballs are cooked through and the chili has thickened.

  4. Serve the meatball black bean chili in bowls, garnished with fresh cilantro.
