How To Make Corn & Green Bean Cakes with Avocado & Chilli Jam

Ingredients
- 1 cup canned corn kernels, drained
- 1 cup canned green beans, drained
- 1/2 cup breadcrumbs
- 2 eggs
- 1/4 cup chopped fresh cilantro
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 ripe avocado, sliced
- 4 tbsp chili jam
Instructions

In a large bowl, combine the corn, green beans, breadcrumbs, eggs, cilantro, salt, and black pepper. Mix well.

Form the mixture into patties and place on a greased baking sheet.

Bake in a preheated oven at 375°F (190°C) for 15 minutes, flipping halfway through.

Serve the corn cakes topped with sliced avocado and a dollop of chili jam.
