Ingredients

  • 1 cup canned corn kernels, drained
  • 1 cup canned green beans, drained
  • 1/2 cup breadcrumbs
  • 2 eggs
  • 1/4 cup chopped fresh cilantro
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 ripe avocado, sliced
  • 4 tbsp chili jam

Instructions

  1. In a large bowl, combine the corn, green beans, breadcrumbs, eggs, cilantro, salt, and black pepper. Mix well.

  2. Form the mixture into patties and place on a greased baking sheet.

  3. Bake in a preheated oven at 375°F (190°C) for 15 minutes, flipping halfway through.

  4. Serve the corn cakes topped with sliced avocado and a dollop of chili jam.
