How To Make Chicken Fattoush

Ingredients

  • 2 chicken breasts, grilled and sliced
  • 4 cups romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red bell pepper, sliced
  • 1 small red onion, thinly sliced
  • 1/4 cup fresh mint leaves
  • 1/4 cup fresh parsley leaves
  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1 garlic clove, minced
  • 1 tsp sumac
  • Salt and pepper to taste
  • Pita bread, toasted and torn into pieces, for serving

Instructions

  1. In a large bowl, combine the lettuce, cherry tomatoes, cucumber, bell pepper, onion, mint, and parsley.

  2. In a small bowl, whisk together the olive oil, lemon juice, garlic, sumac, salt, and pepper to make the dressing.

  3. Drizzle the dressing over the salad and toss to combine.

  4. Arrange the grilled chicken slices on top of the salad.

  5. Serve the chicken fattoush with toasted pita bread pieces on the side.
