How To Make Fattoush salad

Ingredients

  • 4 small pita bread
  • 2 tbsp olive oil
  • 1 tsp sumac
  • 1 head of romaine lettuce, torn into bite-sized pieces
  • 1 cucumber, diced
  • 2 tomatoes, diced
  • 1 red bell pepper, diced
  • 1 small red onion, thinly sliced
  • 1 cup fresh parsley, chopped
  • 1/2 cup fresh mint leaves, chopped
  • Juice of 1 lemon
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F. Cut the pita bread into small squares and toss with olive oil and sumac. Spread on a baking sheet and bake for 10 minutes, or until crispy and golden brown.

  2. In a large bowl, combine the romaine lettuce, cucumber, tomatoes, bell pepper, red onion, parsley, and mint.

  3. In a small bowl, whisk together the lemon juice, extra virgin olive oil, salt, and pepper. Pour over the salad ingredients and toss well to combine.

  4. Just before serving, sprinkle the crispy pita bread croutons over the top of the salad. Serve immediately.
