How To Make Grilled Courgette, Bean & Cheese Quesadilla

Ingredients
- 2 medium courgettes, sliced
- 1 can of black beans, drained and rinsed
- 1 cup of grated cheddar cheese
- 4 large flour tortillas
- 1 tbsp olive oil
- 1 tsp chili powder
- 1/2 tsp cumin
- Salt and pepper to taste
- Optional toppings: sour cream, guacamole, salsa
Instructions

Preheat a grill or grill pan over medium heat.

In a small bowl, combine the olive oil, chili powder, cumin, salt, and pepper. Brush the sliced courgettes with this mixture.

Grill the courgette slices for about 2-3 minutes per side, until they are lightly charred and tender. Remove from heat and set aside.

Place a tortilla on a flat surface and sprinkle half of the grated cheese evenly over one side of the tortilla.

Top with half of the grilled courgette slices and half of the black beans. Sprinkle with a little more cheese.

Fold the tortilla in half, pressing down gently to seal the filling inside.

Repeat with the remaining tortillas and fillings.

Heat a large non-stick skillet over medium heat. Place one filled tortilla in the skillet and cook for 2-3 minutes per side, until golden brown and the cheese has melted.

Repeat with the remaining filled tortillas.

Cut each quesadilla into wedges and serve hot with your choice of toppings.
