How To Make Turkey Tabbouleh

Ingredients

  • 1 cup bulgur wheat
  • 2 cups hot water
  • 1 lb turkey breast, cooked and diced
  • 1 cucumber, diced
  • 1 tomato, diced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh lemon juice
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the bulgur wheat with the hot water. Cover and let it sit for 10 minutes or until the water is absorbed.

  2. Fluff the bulgur wheat with a fork and let it cool.

  3. In the same bowl, add the cooked turkey, cucumber, tomato, parsley, mint, lemon juice, olive oil, salt, and pepper. Mix well to combine all the flavors.

  4. Serve chilled or at room temperature.

  5. Enjoy!
