Ingredients

  • 1 cup bulgur wheat
  • 2 cups boiling water
  • Juice of 2 lemons
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chopped fresh parsley
  • 1/2 cup chopped fresh mint
  • 1 cucumber, diced
  • 2 tomatoes, diced
  • 1/2 red onion, diced

Instructions

  1. In a bowl, pour boiling water over the bulgur wheat and let it sit for about 10 minutes until softened. Drain any excess water.

  2. In a separate bowl, whisk together the lemon juice, olive oil, salt, and pepper.

  3. Add the cooked bulgur wheat, parsley, mint, cucumber, tomatoes, and red onion to the dressing. Toss until well combined.

  4. Let the tabbouleh sit for at least 15 minutes to allow the flavors to meld together.

  5. Serve chilled and enjoy!
