How To Make Grilled Aubergine Tabbouleh

Ingredients
- 2 medium-sized aubergines, sliced into rounds
- 1 cup bulgur wheat
- 1 cucumber, diced
- 2 medium tomatoes, diced
- 1 small red onion, finely chopped
- 1/2 cup fresh mint leaves, chopped
- 1/2 cup fresh parsley, chopped
- Juice of 1 lemon
- 3 tablespoons olive oil
- Salt and pepper, to taste
Instructions

Preheat a grill or grill pan over medium heat.

Season the sliced aubergines with salt and let them sit for 10 minutes to remove excess moisture. Pat dry with paper towels.

Grill the aubergine slices for about 3-4 minutes on each side until they have grill marks and are tender. Remove from heat and let them cool.

In a medium bowl, place the bulgur wheat and cover it with boiling water. Let it sit for about 10 minutes until it’s soft and fluffy. Drain any excess water.

In a large bowl, combine the grilled aubergines, cooked bulgur wheat, cucumber, tomatoes, red onion, mint leaves, and parsley.

In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper. Pour the dressing over the salad and toss well to coat all the ingredients.

Let the tabbouleh sit for about 10 minutes to allow the flavors to meld together. Serve chilled or at room temperature.
