Ingredients

  • 1 cup bulgur wheat
  • 1 small red onion, diced
  • 1 cup pomegranate seeds
  • 1 cup chopped fresh parsley
  • 1/2 cup chopped fresh mint
  • 1/2 cup chopped fresh cilantro
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Place the bulgur wheat in a bowl and cover with boiling water. Let it sit for about 10 minutes until softened and cooked through. Drain any excess water.

  2. In a large mixing bowl, combine the cooked bulgur wheat, red onion, pomegranate seeds, parsley, mint, and cilantro.

  3. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the tabbouleh and toss gently to combine.

  4. Serve immediately or refrigerate for a few hours to let the flavors meld together.
