How To Make Winter Tabbouleh

Ingredients
- 1 cup bulgur wheat
- 1 small red onion, diced
- 1 cup pomegranate seeds
- 1 cup chopped fresh parsley
- 1/2 cup chopped fresh mint
- 1/2 cup chopped fresh cilantro
- 1/4 cup olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions

Place the bulgur wheat in a bowl and cover with boiling water. Let it sit for about 10 minutes until softened and cooked through. Drain any excess water.

In a large mixing bowl, combine the cooked bulgur wheat, red onion, pomegranate seeds, parsley, mint, and cilantro.

In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper. Pour the dressing over the tabbouleh and toss gently to combine.
