Ingredients

  • 2 large tomatoes, diced
  • 1 small red onion, finely diced
  • 1/4 cup lemon juice
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse the bulgur wheat well and transfer it to a large bowl.

  2. Add enough cold water to cover the wheat and let it rest for 10 minutes.

  3. Drain any excess water from the bowl and fluff the bulgur wheat with a fork.

  4. Add parsley, mint, tomatoes, and onion to the bowl and mix well.

  5. In a small mixing bowl, whisk together the lemon juice, olive oil, salt, and pepper.

  6. Pour the dressing over the salad and mix until well combined.

  7. Serve chilled or at room temperature.
