How To Make Baked Polenta with Spinach & Goat’s Cheese

Ingredients
- 1 cup polenta
- 4 cups water
- 1 tsp salt
- 2 cups spinach, chopped
- 1 cup goat’s cheese, crumbled
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1/2 tsp black pepper
Instructions

Preheat oven to 375°F (190°C).

In a large saucepan, bring water to a boil. Slowly whisk in the polenta and salt.

Reduce heat to low and cook, stirring frequently, for about 15 minutes or until the polenta thickens.

In a separate pan, heat olive oil over medium heat. Add garlic and sauté for 1-2 minutes until fragrant.

Add spinach to the pan and cook until wilted, about 3-4 minutes. Remove from heat.

Grease a baking dish with olive oil. Spread half of the polenta evenly on the bottom of the dish.

Top with spinach mixture and crumbled goat’s cheese. Spread the remaining polenta over the top.

Bake for 25-30 minutes or until the top is golden and bubbly.

Allow to cool for a few minutes before serving. Enjoy!
