How To Make Baked Potato Salad

Ingredients
- 4 large potatoes, washed and scrubbed
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup mayonnaise
- 2 tablespoons sour cream
- 2 tablespoons Dijon mustard
- 2 tablespoons apple cider vinegar
- 1/4 cup chopped fresh chives
- 1/4 cup chopped fresh parsley
- 4 slices cooked bacon, crumbled
- 1/2 cup grated cheddar cheese
- Salt and pepper, to taste
Instructions

Preheat oven to 400°F (200°C).

Prick the potatoes all over with a fork. Place them on a baking sheet and drizzle with olive oil. Sprinkle with salt and black pepper.

Bake the potatoes for 40 minutes or until they are tender on the inside and crispy on the outside. Let them cool slightly.

Cut the potatoes into bite-sized pieces and place them in a large bowl.

In a separate bowl, whisk together mayonnaise, sour cream, Dijon mustard, apple cider vinegar, chives, parsley, salt, and pepper.

Pour the dressing over the potatoes and gently toss to combine.

Add the crumbled bacon and grated cheddar cheese to the bowl and mix well.

Serve the baked potato salad chilled or at room temperature.
