Ingredients

  • 1 medium cauliflower head, cut into wedges
  • 1 cup plain yogurt
  • 2 tablespoons tandoori masala
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon cumin powder
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C).

  2. In a large bowl, combine yogurt, tandoori masala, lemon juice, minced garlic, grated ginger, turmeric powder, cumin powder, and salt.

  3. Add cauliflower wedges to the bowl and toss to coat them evenly with the marinade.

  4. Place the cauliflower wedges on a baking sheet lined with parchment paper.

  5. Bake in the preheated oven for 25-30 minutes or until the cauliflower is tender and slightly charred around the edges.

  6. Garnish with fresh cilantro and serve hot.
