Spiced, juicy, succulent chicken cooked to perfection in a classic tandoori marinade.

Ingredients

  • 4 bone-in chicken breast halves
  • 1 cup plain yogurt
  • 2 tbsp lemon juice
  • 2 tbsp vegetable oil
  • 2 tbsp tandoori masala spice mix
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp ginger powder
  • 1/2 tsp salt
  • Lemon wedges and fresh cilantro for serving

Instructions

  1. In a large bowl, whisk together yogurt, lemon juice, oil, tandoori masala, cumin, coriander, paprika, garlic powder, ginger powder, and salt until well combined.

  2. Add chicken to the bowl and toss to coat evenly with the marinade.

  3. Cover the bowl with plastic wrap and refrigerate for at least 2 hours or overnight.

  4. Preheat the oven to 400°F.

  5. Line a baking sheet with parchment paper and place the chicken on it. Discard the remaining marinade.

  6. Bake the chicken for 40 to 45 minutes, or until the internal temperature reaches 165°F.

  7. Serve the chicken with lemon wedges and fresh cilantro.
