Ingredients
- 4 large potatoes, peeled and cut into chunks
- 2 parsnips, peeled and cut into chunks
- 4 tablespoons of goose fat
- Salt and pepper, to taste
Instructions

Preheat the oven to 200°C (400°F).

In a large pot, bring salted water to a boil and add the potato and parsnip chunks. Cook for about 5 minutes until they are partially cooked but still firm.

Drain the potatoes and parsnips and transfer them to a baking dish.

Add goose fat to the baking dish and toss the potatoes and parsnips in the fat until evenly coated. Season with salt and pepper.

Roast in the preheated oven for 45-50 minutes, or until the potatoes and parsnips are crispy and golden, turning them once halfway through cooking.

Serve hot as a delicious side dish.
