How To Make Parsnip, Potato & St Gall Cheese Gratin

Ingredients
- 4 parsnips, peeled and sliced
- 4 medium potatoes, peeled and sliced
- 200g St Gall cheese, grated
- 1 cup heavy cream
- 2 cloves garlic, minced
- 1 tbsp fresh thyme leaves
- Salt and pepper to taste
Instructions

Preheat the oven to 180°C (350°F).

In a large pot, bring salted water to a boil. Add the parsnips and potatoes and cook until slightly tender, about 5 minutes. Drain and set aside.

In a greased baking dish, layer half of the parsnips and potatoes. Sprinkle with half of the grated St Gall cheese.

In a small saucepan, heat the heavy cream, minced garlic, and thyme leaves over medium heat until it starts to simmer. Remove from heat and season with salt and pepper.

Pour half of the cream mixture over the parsnips, potatoes, and cheese in the baking dish.

Repeat layers with the remaining parsnips, potatoes, St Gall cheese, and cream mixture.

Cover the baking dish with foil and bake for 30 minutes.

Remove the foil and bake for an additional 30 minutes until the cheese is golden and bubbly.

Serve hot as a side dish or main course.
