How To Make Rotisserie Chicken with Squash

Add butternut squash to store-bought rotisserie chicken to transform a simple dish into a superbly delicious meal with earthy and slightly spicy flavors.

For Butternut Squash:

  • 12ozbutternut squash,(325 g), such as Marketside®
  • kosher salt and black pepper,to taste

For Rotisserie Chicken:

  • 1traditional rotisserie chicken,such as Marketside®, light meat

For Salad Greens:

  • 2cupssalad greens
  • ¼cupred wine vinaigrette,(60 mL), or balsamic vinaigrette
  • 1lbasparagus,(455 g), grilled


Butternut Squash:

  1. Using a fork, poke holes into the butternut squash package.

  2. Microwave the package for 2 to 4 minutes, or until the squash is tender. Season the squash with salt and pepper.

Rotisserie Chicken:

  1. Separate the 2 wings and 2 breasts from the chicken

Salad Greens:

  1. Dress the salad greens with the vinaigrette.

  2. Serve the chicken with the steamed butternut squash, salad, and grilled asparagus. Enjoy!
