How To Make Oven Pot Roast

Ingredients

  • 2 lbs beef chuck roast
  • 1 onion, sliced
  • 3 carrots, peeled and chopped
  • 3 potatoes, peeled and cubed
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 2 tbsp vegetable oil
  • 1 tbsp Worcestershire sauce
  • 1 tbsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 325°F (165°C).

  2. Season the beef roast generously with salt and pepper on all sides.

  3. In a large oven-safe pot, heat the vegetable oil over medium-high heat.

  4. Sear the beef roast on all sides until browned, about 4-5 minutes per side. Remove the roast from the pot and set aside.

  5. In the same pot, add the sliced onion and minced garlic. Cook until the onion is translucent and the garlic is fragrant.

  6. Add the beef broth, Worcestershire sauce, and dried thyme to the pot. Stir well to combine.

  7. Return the beef roast to the pot, along with any juices that have accumulated. Add the chopped carrots and cubed potatoes around the roast.

  8. Cover the pot with a lid and transfer it to the preheated oven.

  9. Cook for 2 hours, or until the meat is tender and easily pulls apart with a fork.

  10. Remove the pot from the oven and let the roast rest for a few minutes before serving.

  11. Serve the oven pot roast hot, with the vegetables and some of the cooking liquid as a sauce.
