How To Make Roasted Poussin with Oregano Orange Sherry

Ingredients
- 4 poussins (baby chickens)
- 2 oranges, zested and juiced
- 1/4 cup sherry
- 2 tablespoons olive oil
- 2 tablespoons fresh oregano leaves, chopped
- Salt and pepper, to taste
Instructions

Preheat the oven to 400°F (200°C).

In a small bowl, combine the orange zest, orange juice, sherry, olive oil, oregano, salt, and pepper. Mix well.

Place the poussins in a roasting pan and brush them with the orange and sherry mixture.

Roast the poussins in the preheated oven for 35-40 minutes, or until the internal temperature reaches 165°F (74°C).

Baste the poussins with the pan drippings every 15 minutes to keep them moist and flavorful.

Once done, remove the poussins from the oven and let them rest for 5 minutes before serving.

Serve the roasted poussins with a drizzle of the pan juices and garnish with fresh oregano leaves.
