Serves:
Ingredients
- 2 cups basmati rice
- 4 cups water
- 1 tbsp turmeric powder
- 1 tsp cumin seeds
- 1 cinnamon stick
- 4 cloves
- 2 cardamom pods
- 1 large onion, thinly sliced
- 3 tbsp vegetable oil
- Salt to taste
Instructions
-
Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 15 minutes, then drain.
-
In a large pot, heat the vegetable oil over medium heat. Add the cumin seeds, cinnamon stick, cloves, and cardamom pods. Cook until fragrant, about 1 minute.
-
Add the sliced onions to the pot and cook until they turn golden brown and crispy, stirring occasionally. Remove half of the onions and set aside for garnish.
-
Add the drained rice to the pot and stir well to coat it with the spices and oil. Cook for 2-3 minutes.
-
Add the turmeric powder and salt to the pot. Stir well to evenly distribute the turmeric.
-
Pour in the water and bring to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for 10-12 minutes, or until the rice is cooked and the liquid is absorbed.
-
Remove the pot from heat and let it sit, covered, for 5 minutes. Fluff the rice with a fork.
-
Serve the turmeric pilau with the reserved crispy golden onions on top.
