How To Make Spicy Cauliflower Pilau

Ingredients
- 1 cauliflower, cut into florets
- 2 cups basmati rice
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 inch ginger, grated
- 1 green chili, finely chopped
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- 1 teaspoon red chili powder
- Salt to taste
- 2 tablespoons vegetable oil
- Fresh cilantro leaves, for garnish
Instructions

Rinse the rice under cold water until water runs clear. Soak the rice in water for 15 minutes, then drain.

Heat oil in a large pot over medium heat. Add cumin seeds and let them splutter.

Add chopped onion, garlic, ginger, and green chili. Saute until the onion turns translucent.

Add the cauliflower florets and saute for 5 minutes until they start to soften.

Add turmeric powder, garam masala, red chili powder, and salt. Mix well to coat the cauliflower with spices.

Add the soaked and drained rice to the pot. Stir gently to combine the rice with the cauliflower and spices.

Pour in 4 cups of water and bring to a boil. Reduce heat to low, cover the pot, and let it simmer for 15-20 minutes, or until the rice is cooked and fluffy.

Once cooked, fluff the rice with a fork. Garnish with fresh cilantro leaves.

Serve hot with raita or yogurt on the side.
